Rye Porter gets a boost from malted rye <strong>and</strong> chocolate rye as well as Belgian c<strong>and</strong>y<br />

sugar for a smooth <strong>and</strong> complex flavor. Belgian yeast is added to complement<br />

the chocolate <strong>and</strong> rye character <strong>and</strong> the brew is delicately hopped so as not to<br />

Established 1999. Pearl Street brewery began as a family owned operation<br />

down in a basement on La Crosse’s fabled Pearl Street. The tiny, underground<br />

brewery quickly started producing award-winning ales <strong>and</strong> lagers. After<br />

years of organic growth <strong>and</strong> expansion, the brewery is still family owned<br />

<strong>and</strong> operated but now resides in the infamous <strong>and</strong> historic La Crosse Rubber<br />

Mills building, located in La Crosse’s lower northside depot neighborhood.<br />

The Rubber Mills was well known for being the place where rubber boots for<br />

brewers <strong>and</strong> other tradesmen (<strong>and</strong> rubber horseshoes) had been made for<br />

over a century. Now, comfortable in their new home, the PSB crew carries on,<br />

using all natural <strong>and</strong> organic ingredients to brew their beers. You may want to<br />

visit the brewery when you are in La Crosse, <strong>and</strong> sit in one of the 100-year-old<br />

maple chairs that surround the bar in the Tasting Room <strong>and</strong> enjoy a pint or two.<br />

DTB Brown Ale: An all-malt Brown Ale. This long-time La Crosse st<strong>and</strong>ard is brewed<br />

with seven malt varieties that create a complex nutty flavor with roasted undertones.<br />

Hopped with both American <strong>and</strong> Brit hops. Gold Medal Winner at World Beer<br />

Championships. 5.5% ABV.<br />

Pearl Street Pale Ale: A full-body pale ale <strong>and</strong> a local favorite! This classic<br />

Pearl Street original has been brewed in this town since 1999. It’s got a pleasant hop<br />

bitterness <strong>and</strong> is dry-hopped for a flowery nose. 6.0% ABV.<br />

El Hefe Bavarian Hefeweizen: A Bavarian-style wheat beer brewed with<br />

American barley <strong>and</strong> wheat malts <strong>and</strong> fermented with Weinstephan yeast for a subtle<br />

banana clove aroma often found in Bavarian wheat beers. Traditionally unfiltered,<br />

<strong>and</strong> usually served with a wedge of lemon. 5.0% ABV.<br />

That’s What I’m Talkin’ ‘bout Organic Rolled Out Stout: Chocked full<br />

o’ organic rolled oats, chocolate <strong>and</strong> black malts, American <strong>and</strong> British hops, this one<br />

has a full-flavor, black body <strong>and</strong> mocha brown head. 6.0% ABV.<br />

Rubber Mills Pils: A heartily hopped pilsner lager brewed with Wisconsin malt<br />

<strong>and</strong> German whole leaf hops. Yellow in color, crisp finish <strong>and</strong> a fresh hop character<br />

throughout. 5% ABV<br />

The DANK is back! DANKENSTEIN!!: Winner of the 2008 Great Taste “Best over<br />

the top beer” (Isthmus)! Fire-brewed Imperial IPA. Starting gravity of 19.2 <strong>and</strong> colossal<br />

quadruple-hoppings. 9.5% 109 IBUs<br />

2:30 PM—Bedwetter Barleywine: This big ugly step-cousin of the beer family<br />

is a kick in the pants with six big malts (mostly Maris Otter <strong>and</strong> Special B) cleverly<br />

hiding all the alcohol. This here’s a sneaky one. The name says it all. 11% ABV<br />

4:30—Red Wine Barrel-aged Imperial Pilsner: A strong Pilsner Lager true<br />

to it’s roots, this robust version of a traditional Czech Pils is brewed with pilsner malt<br />

<strong>and</strong> hopped with rare <strong>and</strong> sought after French Strisselspalt hops. Gently aged in Pinot<br />

Noir Barrels for a unique wine-like bouquet. 8%ABV.<br />
