the flavors <strong>and</strong> aromas of summer fields. Brewed with an ancestor of wheat called<br />

spelt, its straw-colored body, lively carbonation <strong>and</strong> a unique fermentation profile<br />

evoke fresh cut hay <strong>and</strong> cracked peppercorn.<br />

Dragons Milk: 23° P, 10% ABV. Dragon’s Milk Ale, is a crown jewel of New Holl<strong>and</strong><br />

Brewing Company. It is the unrivaled result of painstaking processes – both creative<br />

<strong>and</strong> scientific. We could tell you about the centuries-old tradition of the term,<br />

Dragon’s Milk, or we could tell you about the history, craftsmanship <strong>and</strong> challenges of<br />

what’s important, the beer inside this bottle. Roasty malt character intermingled with<br />

deep vanilla tones, all dancing in an oak bath.<br />

El Mole Ocho Mexican Spiced Ale: 22° P 8% ABV. Our exploration into the<br />

flavors of mole, the legendary sauce of central Mexico. Malty aroma <strong>and</strong> rich, cocoaladen<br />

body laced with an invigorating tinge of dried chilies <strong>and</strong> coffee.<br />

2010 El Mole Ocho: Vintage 2010 El Mole Ocho, same as above but see what a<br />

difference a few years can make.<br />

Beerhive: 20° P 9% abv. Little John’s local bees create a spring wildflower-honey<br />

that lends a sweet, earthy complexity to a traditional style of beer with a balancing<br />

snap of ginger in the finish.<br />

2010 Beerhive<br />

Pilgrims Dole Wheatwine: 25° P, 11.4% ABV. Pilgrim’s Dole is a barleywine-style<br />

ale made with fifty percent wheat malt, or what we at New Holl<strong>and</strong> call a wheatwine.<br />

Pilgrim’s Dole blends warming <strong>and</strong> slightly sweet flavors with a unique caramelized<br />

character. During the 14th century, the term “Pilgrim’s Dole” described the rations of<br />

bread <strong>and</strong> ale given to nourish wayfarers on their holy pilgrimage. At New Holl<strong>and</strong>,<br />

Pilgrim’s Dole is brewed for the cultural explorer of today. It is a rewarding discovery<br />

on the road to enlightenment. Whether in a snifter or from your rucksack, Pilgrim’s<br />

Dole will enhance any experience <strong>and</strong> is certain to incite w<strong>and</strong>erlust <strong>and</strong> to fuel<br />

adventure. It is a barleywine-style ale made with fifty percent wheat malt, or what<br />

Charkoota Rye: 19° P, 7.75% ABV. Charkoota Rye is a Smoked Rye Dopplebock. An<br />

homage to all things Pig, including Porkapalooza <strong>and</strong> the age-old tradition of Charcuterie,<br />

Charkoota Rye’s malty backbone is derived from a blend of rye <strong>and</strong> four other malts,<br />

including malted barley smoked over cherry wood. Its smoke-forward body is balanced<br />

with tones of deep mollasses <strong>and</strong> caramel, with a crisp, clean lager finish.<br />

Envious: 17.1° P, 7.5% abv. Michigan pears fuel a second fermentation, providing subtle nuance<br />

between grain & fruit. A slumber on oak <strong>and</strong> local raspberries adds depth <strong>and</strong> tartness.<br />

Blue Sunday: 17.1° P, 8.7% A.B.V. This unique anniversary libation, heritage-blended<br />

from our library of barrel-soured beers, exhibits deeply layered flavors of malt <strong>and</strong><br />

oak, with a tart finish.<br />

Special releases<br />

2:45 pm-Blue Sunday Barrel # 16 Brettanomyces Bruxellensis:<br />

French Oak barrel that contained Blue Sunday from 2009 (most likely racked around<br />

Dec of 2009). No microorganisms were added until March of 2011 (so it essentially<br />

gained a ‘house’ character up till that point for the most part). In March of 2011 we<br />

inoculated the barrel with Brettanomyces Bruxellensis <strong>and</strong> let the Brett work its<br />

magic so to speak. This strain of Brett is noticeable as it produces a lot of ‘cherry pie’<br />

characteristics, which I think are apparent in this barrel. It is very sweet, almost to<br />

the point of a sweet-tart flavour with the finish having a lot of tartness to it, almost<br />

to the point of drying it out.<br />

3:45 PM-3Ltr “To be Named” : A special one of a kind blend! The blend is<br />

made up of Rye Hatter, Black Hatter, barrel-aged Golden Cap (aged in wood for<br />

about 3 months), <strong>and</strong> barrel-aged Poet (aged in wood for about 2 years). The blend<br />

lends heavily towards a more lactic character with some nice mild chocolate/spice<br />

undertones present. There is a nice bitterness at the end, but not much in the way of<br />

hop aroma. Each bottle has about 5-7 whole leaf Cascade hops.<br />

4:45 PM-Sour Attitude: 6% (ish) ABV. This beer is a one time only blend<br />

showcasing the result of several barel aging techniques. A blend of 2009 Blue<br />

Sunday, one year barrel aged Sundog, <strong>and</strong> a house only brown ale, Sour Attitudes<br />

flavors are based in the duality of fruit <strong>and</strong> funk.<br />
