When Chuck Stuhrenberg founded Big Muddy Brewing in 2009, it was Illinois’ only<br />
production brewery south of Chicago. Since then we’ve grown our selection of<br />
brews <strong>and</strong> now offer 8 different flavors with new ones added every few months.<br />
Saluki Dunkel Dog: 5.4% Alcohol by Volume, 1.053 OG , 22 IBU. Dark Amber/Dunkel.<br />
Brewed with 2 Row Pale Malt, Roasted Malt, Munich Malt & Chocolate Malt. Excellent<br />
drinkability with malts showing depth <strong>and</strong> complexity. Clean chrisp finish.<br />
Vanilla Stout: 6.0% Alcohol by Volume, 1.059 OG , 18 IBU, Milk Stout. A traditional<br />
Milk Stout infused with pure Madagascar vanilla. Subtle vanilla flavor throughout with<br />
roasted notes <strong>and</strong> a slightly sweet, smooth finish.<br />
Big Muddy Monster: 6.5% Alcohol by Volume, 1.056 OG , 60 IBU. India Brown Ale. A<br />
marriage of an American Brown Ale with a hop-centric India Pale Ale. A monster of an<br />
ale with robust malt backbone <strong>and</strong> a mean hop-streak. The beer is brewed with five<br />
different varieties of specialty malts, three separate hop additions during the boil<br />
<strong>and</strong> a generous dose of Citra hops during conditioning to give the beer a very lively,<br />
distinctive aroma that hits the senses before the first sip is ever taken.<br />

Established in 2009, the Blind Pig Brewery is Champaign-Urbana’s first<br />
all-grain brewery since prohibition. Brewer Bill Morgan brews three times<br />
a week on a tiny system <strong>and</strong> turns out h<strong>and</strong> crafted brews full of flavor <strong>and</strong><br />
lots of love. All our beer is unfiltered, unpasteurized, <strong>and</strong> unadulterated—just<br />
wholesome goodness made with quality ingredients <strong>and</strong> no fear. When you are<br />
in C-U, come visit our English style pub which features an authentic 1859 back<br />
bar, 200 year old barn beams, tables from Svoboda’s Nickleodeon in Chicago,<br />
the greenest beer garden in town, a pub trivia night, <strong>and</strong> best of all: no TVs! Drop<br />
in, unplug, unwind, <strong>and</strong> enjoy some of the freshest beer around.<br />
Rauch Heller Bock: OG 1.064 ABV: 6.7% IBU: 28. Our pale bockbier is made with 10%<br />
beech-smoked German malt <strong>and</strong> yeast from the Augustiner brewery in Munich. Nine<br />
months of lagering has resulted in a clean, crisp <strong>and</strong> delicately smoky flavor.<br />
Himbeere Cyser: ABV: 9.6%. 130 gallons of Curtis Orchard sweet cider, 70 pounds of<br />
Campbell Apiaries wildflower honey, <strong>and</strong> 25 pounds of raspberries combine to make<br />
this nectar of the gods. Aromas of apples, raspberries, <strong>and</strong> honey swirl together over<br />
a dry <strong>and</strong> slightly tart finish.<br />
American Dark Ale: OG: 1.064 ABV: 5.9% IBU: 75+. Is it a Black IPA or is it a<br />
Cascadian Dark Ale? Frankly, we don’t like either of those names, but you’ll like this<br />
beer! Not as roasty as a porter or a stout, it has just a touch of dark malts.<br />
Hattori HanzÕ Pale Ale: OG: 1.050 ABV: 4.9% IBU: 46. This light <strong>and</strong> refreshing<br />
pale ale is made with 100% Sorachi Ace hops. These unique hops impart aromas of<br />
lemongrass <strong>and</strong> dill. (This beer was formerly know as ICBG Replicale 2010.)<br />
Samburro Chili Beer: OG: 1.054 ABV: 5.4% IBU: 52. Our first Pro/Am brew returns!<br />
Samburro is the brainchild of local homebrewer Sam Elson. Mexican Morita peppers<br />
give this amber ale a gentle smoky aroma <strong>and</strong> just a hint of spicy heat.<br />
Witbier: OG: 1.042 ABV: 4.1% IBU: 16. Hello summer! Made with 50% barley malt <strong>and</strong> 50%<br />
flaked wheat, it’s delicate balance of orange zest, cori<strong>and</strong>er, chamomile, <strong>and</strong> grains of<br />
paradise make it a perfect companion for sitting outside, cooling off, <strong>and</strong> relaxing.<br />
The Mysterious 200th Brew: OG: 1.115 ABV: 10.1% IBU: 85. Our 200th brew is an<br />
Imperial Stout. We’ve infused the keg with cacao nibs <strong>and</strong> Guajillo peppers. Dark, bold,<br />
rich, <strong>and</strong> strong, with aromas of chocolate, coffee <strong>and</strong> smoked peppers.<br />
Belgo-American IPA: OG: 1.074 ABV: 7.9% IBU: 70. A very pale IPA made with Pilsner<br />
malt, Belgian yeast, <strong>and</strong> a shameful amount of American hops. Dry hopped with<br />
Simcoe, Centennial, <strong>and</strong> Citra.<br />
Cherry Milk Stout: OG: 1.085 ABV: 7.0% IBU: 25. Roasted barley, milk sugar, <strong>and</strong> 42<br />
pounds of Oregon pie cherries combine to make a wonderful cold weather restorative. Full<br />
bodied with aromas of coffee <strong>and</strong> stewed fruits, sweet but not too sweet.<br />
Saison de la sorcière: OG: 1.073 ABV: 8.5% IBU: 45. Pale malts, Brettanomyces<br />
yeast, <strong>and</strong> 8 spices & herbs magically combine in this bewitching brew. (Black pepper,<br />
rose hips, grains of paradise, hibiscus, sumac, dried orange peel, dried whole lemon,<br />
<strong>and</strong> fresh lime zest.)<br />
Rye Abbey Single: OG: 1.044 ABV: 4.7% IBU: 22. Nine percent rye malt gives a<br />
distinct spicy note to our refreshing <strong>and</strong> easy drinking abbey single. This brew is also<br />
our version of this year’s ICBG Replicale.<br />
Summer Ale: OG: 1.036 ABV: 3.9% IBU: 30.Our Summer Ale is a traditional Englishstyle<br />
summer bitter. One third wheat malt <strong>and</strong> two thirds barley malt make a very<br />
light <strong>and</strong> refreshing thirst quencher. Dry hopped with English Fuggles.<br />

We opened the first brewery in Topeka since the Prohibition era. It is<br />
named after the Prohibition era custom of displaying stuffed tigers in<br />
establishments to alert patrons of the availability of bootleg alcohol. These<br />
speakeasies were referred to as “Blind Tigers.” We keep at least six flagships<br />
<strong>and</strong> seven rotating seasonals on tap, to the tune of about 1200 barrels a year.<br />
Our brews have gathered 11 GABF medals <strong>and</strong> 4 WBC awards over the past twelve<br />
years. Our Brewpub is located at 37th & South Kansas Avenue.<br />

County Seat Wheat: 4.5% Abv, OG: 12°P/1.048, 22 IBU’s. When you brew in the<br />
wheat state, you’d better have a damn good wheat beer. This award winning<br />
American style wheat beer delivers. Our straw gold beauty is dripping with sunshine.<br />
The floral hop aroma is reminiscent of a wildflower laden prairie meadow. The bready<br />
malt character brings visions of amber waves of grain. She finishes crisp <strong>and</strong> clean,<br />
then leaves you with a broken heart.<br />
Top Gun IPA: 7.3% Abv, OG: 17.5°P/1.070, 60+ IBU’s. San Diego Style IPA! On a trip to<br />
San Diego we had several opportunities to soak up the local beer scene. San Diego<br />
area brewers <strong>and</strong> their aggressively hopped beers have made the West Coast style of<br />
brewing famous. This IPA employs indecent amounts of Amarillo & Simcoe hops. We<br />
named this brew after the TOP GUN fighter pilot school. Stay Classy San Diego!<br />
Capital City Kolsch: 4.5% Abv, 12°P/1.048, 18 IBU’s. After sampling some Kolsch<br />
Bier in Germany I found that my old recipe needed some tweaking. Kolsch is a great<br />
beer for those who enjoy light beers or American pilsners. The light <strong>and</strong> subtle<br />
flavors of Kolsch are similar <strong>and</strong> yet more complex than the typical joe six-pack beer.<br />
The lager like characteristics are achieved through a long maturation period of cold<br />
conditioning. Kolsch, the King of Cologne, be careful how you use it.<br />
Java Porter: 5.4% Abv, 15°P/1.060, 33 IBU’s. Our award winning coffee beer! We<br />
brew this robust style Porter with coffee we roast at the Brewery. The roasted coffee<br />
compliments the dark roasted malts we use in this brew. English malts <strong>and</strong> hops<br />
round out the balance. Mmm, the perfect breakfast beer.<br />

Cleavel<strong>and</strong> founded Blue Cat in a restored century old building in the<br />
downtown entertainment district. Relax <strong>and</strong> enjoy one of our beers on<br />
tap while watching the brewers brew one of their nearly 50 recipes in the<br />
two-story brew tower. After a casual meal on the first floor, move upstairs<br />

Tucks Tenacious Trippel: ABV: 10%, 18 Plato (1.072 S.G.), IBU: 22. Belgium Trippel. As<br />
complex as a fine wine (<strong>and</strong> with about the same kick!), this type of ale has been brewed<br />
by Trappist Monks for centuries. Special Belgian yeast makes it cloudy with a fruity finish.<br />
Mississippi Mocha Coffee Stout: ABV: 5.6%, 15 Plato (1.060 S.G.), IBU: 14.9.<br />
Spice Beer. A full body <strong>and</strong> heavy malt profile balance this beer splendidly with the<br />
fresh Mocha Java coffee that goes into every batch.<br />
Cori<strong>and</strong>er & Orange: ABV: 5.6 %, 10.2 Plato (1.041 S.G.) IBU: 10.1. Spiced American<br />
Wheat. One of the most beloved of the Blue Cat brews, Cori<strong>and</strong>er & Orange is a spiced<br />
American wheat beer brewed with fresh oranges, cori<strong>and</strong>er seed, <strong>and</strong> ginger root.<br />
Howling Man: Imperial IPA. IBU: 75, ABV: 9.6%.<br />
Black Zemon: Black Saison (with Crystalized Ginger). IBU: 23, ABV: 6%. A<br />
collaboration brew with Lunar Brewing.<br />
