1. Manually: You have an accurate, operating thermometer (accurate within ±1°C)<br />

and measure the temperature of the water. The temperature must be<br />

permanently recorded and the record initialed.<br />

OR<br />

• Pre-Rinse water temperature:<br />

- Minimum of a weekly check.<br />

- Temperature must be taken at the beginning of the cycle with a<br />

thermometer in the fill sink.<br />

- The temperature must conform to the specifications on the cleaning<br />

and sanitizing chart as filled out by the equipment dealer.<br />

OR<br />

• Wash water:<br />

- Temperature can be taken at the beginning or end of the cycle.<br />

- Minimum of a monthly check (weekly preferred).<br />

- Whether start or end temperature taken, the temperature must<br />

conform to the specifications on the cleaning and sanitizing chart as<br />

filled out by the equipment dealer.<br />

2. Time Temperature Recorder: If your time temperature recorder does not have<br />

an alarm nor has basic alarms, you must initial the chart (or similar method) to<br />

prove that the temperature was checked. If the recorder is of a digital design, you<br />

must manually record the temperature and initial the record, or have a<br />

computerized record on the system proving that the temperature was checked. If<br />

the time temperature recorder has “smart” alarms, the alarms must be set<br />

according to the parameters below if you want to eliminate recording any<br />

information manually.<br />

• Pre-Rinse water temperature:<br />

- Minimum of a weekly check.<br />

- Temperature probe must be in the fill sink or on the return wash<br />

line.<br />

- Temperature must be taken at the beginning or end of the cycle.<br />

- If using an alarm, alarm must be triggered if the temperature drops<br />

more than 5°C below the accepted range.<br />

OR<br />

• Wash water:<br />

- Temperature can be taken at the beginning or end of the cycle.<br />

- Minimum of a monthly check (weekly preferred).<br />
