Né à Alma, au Lac-Saint-Jean, Marcel Bouchard<br />
compte plus de 35 ans d’expérience sous la toque.<br />
Il a notamment œuvré au Provençal et au Doyen,<br />
dans sa ville natale, au Manoir Richelieu, à Pointeau-Pic,<br />
et assuré la direction de la restauration de<br />
l’Auberge Estrimont, à Orford. Il a également été<br />
chef responsable de la cuisine expérimentale et du<br />
centre de consultation en entreprise de l’Institut<br />
de Tourisme et d’hôtellerie du Québec, à Montréal.<br />
À l’Auberge des 21, dont il est chef-propriétaire<br />
depuis 1992, Marcel Bouchard sert une cuisine<br />
fine et moderne tablant sur les aliments sauvages<br />
méconnus de sa région d’origine.<br />

Born in Alma, in the Lac-Saint-Jean region, Marcel<br />
Bouchard has over 35 years of experience as a<br />
chef. His career path includes notable positions at<br />
Provençal and Doyen in his hometown, at Manoir<br />
Richelieu, in Pointe-au-Pic, and as restaurant director<br />
at Auberge Estrimont in Orford. He was also the<br />
chef responsible for experimental cuisine and the<br />
business consulting centre at the Institut de Tourisme<br />
et d’hôtellerie du Québec, in Montreal. At Auberge<br />
des 21, where he has been chef-owner since 1992,<br />
Marcel Bouchard serves a fine, modern cuisine<br />
based on the little-known naturally growing wild foods<br />
of his native region.<br />

bistro à vin la vieille garde — Chicoutimi<br />
Pour le moins éclaté, le parcours de Merlin Lambert,<br />
« charmeur de papilles » patenté ! Entre<br />
ses nombreux périples outre-mer, ce Gaspésien<br />
d’origine brasse de belles et bonnes affaires à<br />
Montréal pendant les décennies 1990 et 2000. Il<br />
se démarque avec le bistro La Loïe et connaît un<br />
vif succès avec Les Deux singes de Montarvie,<br />
encensé par le New York Times. En 2009, Lambert<br />
part explorer de nouveaux horizons. Devenu copropriétaire<br />
et chef de cuisine du Bistro à vin La Vieille<br />
Garde, à Chicoutimi, cet apôtre de la « bistronomie »<br />
s’applique à marier terroirs et beaux vins.<br />

1 er et 2 mars<br />
A master of flavours, Merlin Lambert has certainly<br />
enjoyed an eventful and eclectic journey. Between his<br />
many trips overseas, the Gaspésie-born gastronomer<br />
enjoyed prosperous businesses in Montreal in the<br />
1990s and 2000s. He made his mark with bistro<br />
La Loïe and later with the highly successful Les<br />
Deux singes de Montarvie, which won praise from the<br />
New York Times. In 2009, Lambert left the city to<br />
explore new horizons. Now co-owner and executive<br />
chef of Bistro à vin La Vieille Garde, in Chicoutimi,<br />
this disciple of “bistronomy” draws upon his skills and<br />
ingenuity to pair local products with fine wines.<br />
