Formé dans une école hôtelière de Buenos Aires,<br />
Mauro Colagreco débute dans de prestigieux<br />
restaurants de la Capitale argentine. Après un stage<br />
chez Bernard Loiseau à la Côte d’Or, à Saulieu,<br />
il déménage à Paris pour travailler à l’Arpège, le<br />
mythique restaurant d’Alain Passard. Il œuvre<br />
ensuite pour Alain Ducasse au Plaza Athénée.<br />
Son séjour parisien s’achève au Grand Véfour, aux<br />
côtés de Guy Martin. En 2006, Colagreco entre au<br />
Mirazur, à Menton, où il s’illustre depuis : Gault et<br />
Millau en a fait sa Révélation de l’année 2007 et<br />
son Chef de l’année 2008 en plus de lui décerner<br />
4 toques en 2010, et le Guide Michelin lui a accordé<br />
une 2 e étoile en 2012.<br />

Diplômée en médecine vétérinaire. Grande voyageuse,<br />
elle a fait le tour du monde. Elle a fait ses études professionnelles<br />
en cuisine au collège Gato Dumas, ainsi<br />
qu’en compa gnie de Guillermo Calabrese. Elle s’est<br />
ensuite perfectionnée à l’Institut argentin de la gastronomie.<br />
En 2000, elle a créé l’établissement El Federal,<br />
le premier restaurant de cuisine régionale argentine à<br />
tendance fusion avec la cuisine autochtone. En 2003,<br />
elle a fondé un restaurant de cuisine calabraise baptisé<br />
Gli Comparatore. Elle est aussi consul tante et collabore<br />
à des émissions télévisées ainsi qu’à d’importants<br />
magazines culinaires. Grâce à Slow Food International,<br />
elle a découvert les saveurs de la cuisine autochtone,<br />
des produits latino- américains emblématiques et des<br />
méthodes de cuisson et de conservation.<br />

Mauro Colagreco began his training in Buenos Aires,<br />
where he worked in some of the most prestigious<br />
restaurants in the Argentinean capital. After doing<br />
an internship with Bernard Loiseau at Côte d’Or,<br />
in Saulieu, he moved to Paris and worked in Alain<br />
Passard’s legen dary resto l’Arpège, then for Alain<br />
Ducasse at the Hotel Plaza Athénée. He completed<br />
his Parisian trek alongside Guy Martin, spending a<br />
year at Le Grand Véfour. Since establishing Mirazur in<br />
Menton in 2006, the young Italo-Argentinean cook has<br />
been accorded some of the most prestigious culinary<br />
awards around: Gault & Millau named him “Discovery<br />
of the Year” in 2007 and “Chef of the Year” in 2008,<br />
then granted him four Toques in 2010. In 2012,<br />
Colagreco was awarded his second Michelin star.<br />

Graduate in veterinary medicine and inveterate traveler,<br />
Paula Comparatore has been all over the world.<br />
She completed her professional studies in cuisine<br />
at the Gato Dumas cooking school and also studied<br />
under Guillermo Calabrese. She went on to finish her<br />
studies at the Argentinean Institute of Gastronomy. In<br />
2000, she founded El Federal, the first restaurant in<br />
regional Argentinean cuisine to essay a fusion with<br />
native cuisine. In 2003, she opened Gli Comparatore,<br />
a restaurant specializing in Calabrian cuisine. She is<br />
also a consultant and collaborates with TV programs<br />
and major culinary magazines. Thanks to Slow Food<br />
International, she has discovered the flavours of<br />
native cuisine, signature Latin-American products<br />
and methods of cooking and conservation.<br />

alejandro digilio<br />
la vinería de gualterio bolívar<br />
Alejandro Digilio a suivi une formation de restaurateur<br />
à l’International Buenos Aires Hotel & Restaurant<br />
School et est cuisinier professionnel à l’Institut argentin<br />
de la gastronomie. Il a fait ses débuts en cuisine<br />
en Argentine en 1994, pour ensuite parfaire son art à<br />
Barcelone et à Paris. De retour, il a été chef du restaurant<br />
Azafrán et a fait un stage au El Bullí. En 2007, il<br />
a fondé La Vinería de Gualterio Bolívar en misant sur<br />
l’évolution et l’application de nouvelles techniques et<br />
tendances d’une cuisine conceptuelle, rationnelle et<br />
contemporaine. Il a voyagé à l’étranger (notamment en<br />
Colombie et en Thaïlande) pour présenter des concepts<br />
de la gastronomie contemporaine. Il a reçu des distinctions<br />
de prestigieux magazines nationaux et étrangers<br />
et a récemment représenté l’Argentine au festival Food<br />
and Wine Punta del Este.<br />

Alejandro Digilio trained at the International Buenos Aires<br />
Hotel & Restaurant School and is a professional cook at<br />
the Argentinean Institute of Gastronomy. He began his<br />
career in cuisine in Argentina in 1994, later refining and<br />
perfecting his art in Barcelona and Paris. Returning to<br />
Argentina, he worked as a chef in the restaurant Azafrán<br />
and completed an internship at El Bullí. In 2007, he<br />
founded La Vinería de Gualterio Bolívar, focusing on<br />
evolving and applying new techniques and trends in<br />
order to create a conceptual, rational and contemporary<br />
cuisine. He has traveled widely (notably to Colombia and<br />
Thailand) to present concepts in contemporary gastronomy.<br />
Alejandro has received honours and recognition<br />
from prestigious national and foreign magazines and<br />
recently represented Argentina at the Food and Wine<br />
Punta del Este festival.<br />

Diego Gera a commencé à travailler pour la chaîne<br />
Sheraton. Huit ans plus tard, il devient sous-chef du<br />
restaurant El Ajibe. Il a également été directeur gastronomique<br />
à The BUE Trainers. En 2000, il a travaillé<br />
au Mosimann Club de Londres. Diego a gagné la Toque<br />
d’Or du meilleur chef, la Médaille d’honneur et un prix<br />
de l’Académie Culinaire de France. Il a représenté<br />
l’Argentine dans le cadre du Bocuse d’Or à Lyon et remporté<br />
le prix du meilleur plat de viande, ainsi que la<br />
Médaille de reconnaissance de la Mairie de Lyon et le<br />
trophée mondial de cuisine et de pâtisserie à Paris. Il<br />
est membre de l’Académie culinaire et diplômé d’honneur<br />
de l’Institut de la gastronomie française. Il est<br />
également vice-directeur de l’Institut argentin de la<br />
gastronomie, directeur général de The Bue Trainers et<br />
chef de cuisine du restaurant Leopoldo.<br />

Diego Gera began his career in the kitchens of the<br />
Sheraton chain. Eight years later, he became sous-chef<br />
at the restaurant El Ajibe. He was also director of gastronomy<br />
at The BUE Trainers. In 2000, he worked at the<br />
Mosimann Club in London. Diego has won the Toque<br />
d’Or for best chef, the Médaille d’honneur and an award<br />
from the Académie Culinaire de France. He represented<br />
Argentina at the Bocuse d’Or in Lyon and won the award<br />
for best meat dish, and has also been awarded the<br />
Médaille de reconnaissance by the City of Lyon and the<br />
Trophée mondial de cuisine et de pâtisserie in Paris. He<br />
is a member of the Académie culinaire and an honorary<br />
member of the Institut de la gastronomie française.<br />
He is also deputy director of the Argentinean Institute<br />
of Gastronomy, managing director of The Bue Trainers<br />
and head of the restaurant Leopoldo.<br />
