• COLCA CANYON<br />
The best way to access the canyon is via Arequipa, the country's<br />
second largest city. Rent a car or opt to ride the bus which<br />
goes into several villages located at the canyon. A hiker's<br />
paradise, it is also home to many natural hot springs, manmade<br />
terraced fields used for farming activities, Colca river to which<br />
one can zip-line over and the Cruz del Cóndor cliff top. The<br />
cliff top is a lookout point for condor bird-watching between<br />
8am and 10am. The canyon also houses quaint little squares<br />
and churches with villagers selling embroidery and alpaca<br />
wool products.<br />

WHAT TO EAT?<br />
Lomo Saltado is perhaps one of the most well known Peruvian<br />
dishes which consists of strips of beef, onions, tomatoes and<br />
peppers. It is served with fries and rice. Another go-to dish is<br />
Ceviche, a raw fish cooked in citrus juices usually served with<br />
sweet potato and corn. Also, Llama and Alpaca are delicacies<br />
in Peru that are very popular. The two meats are very similar<br />
and not too different in taste from beef. Alpaca is much softer<br />
and similar in texture to a beef steak whereas llama tends to<br />
be drier and chewier. As the country experiences a range of<br />
climates, this translates to an impressive diversity of produce.<br />
That means potatoes by the thousands in varieties as well as<br />
corn apart from the country's signature 'aji' chillies which are<br />
often puréed into sauces. If you're not a fan of spicy dishes,<br />
try the Arroz Con Pato which is rice cooked with cilantro and<br />
other herbs served with a roasted or seared piece of duck<br />
meat or Pollo a la Brasa which is chicken marinated in Peruvian<br />
spices roasted over a spit fire or baked in hot ashes.<br />
