Baked potato soup
INGREDIENTS
2 tablespoons butter
1 small onion, chopped
1 garlic clove, minced
3 tablespoons flour
1 1/2 teaspoons salt
1 teaspoon dried basil, optional
1/2 tablespoon ground black pepper
2 1/2–3 cups chicken broth
1 cup half and half
2 large potatoes, baked and cubed (about
2 cups)
1/4 teaspoon hot pepper sauce
Shredded cheddar cheese
Crumbled bacon
DIRECTIONS
In a large saucepan, melt butter. Sauté onion and garlic until tender. Stir in flour, salt,
basil, and black pepper. Mix well. Gradually add broth. Whisk to keep the flour from
clumping. Bring to a boil. Stir for 2 minutes. Add the cooked potatoes, cream, and hot
pepper sauce. Heat through but do not boil. Top with bacon and cheese.
