joan's broccoli madness salad
INGREDIENTS
1 bunch raw broccoli florets, washed
1/2 cup cooked bacon, crumbled
1/2 cup cashews
1/3 cup raisins
Dressing:
1 cup mayonnaise
1/3 cup sugar
2 tablespoons apple cider vinegar
1/4 cup red onion, chopped
DIRECTIONS
Mix the broccoli, bacon, cashews, raisins and onions in a large bowl. In a second bowl,
beat dressing ingredients together gently until smooth. About 10 minutes before
serving, toss the salad with the dressing to allow flavors to meld.
mason jar stacked salad
INGREDIENTS
8 cups baby spinach or romaine lettuce
1 ripe pear, cut into thin slices
1/3 cup pomegranate seeds
2 ounces Gorgonzola cheese
Drizzle of honey, optional
Champagne Vinaigrette:
1/4 cup champagne vinegar
1 teaspoon Dijon mustard
1/2 teaspoon minced garlic
1 tablespoon fresh squeezed lemon juice
1/4 teaspoon fresh cracked black pepper
2 tablespoons olive oil
DIRECTIONS
Mix dressing. Add to bottom of mason jar then layer ingredients. Shake before eating.
