Con su arte culinario, Carlos se ha convertido en embajador
de México en Chicago. En julio pasado fue invitado a la Segunda
Muestra Anual Experience México, muestra gastronómica presentada
por el Consejo de Promoción Turística de México en Estados
Unidos. En el barrio de West Town, tan diverso en población y
en gastronomía, Mexique se distingue por su buena cocina y por
mostrar otra faceta de México. Gaytán siempre pone el ejemplo en
su restaurante. No es extraño que, a pesar de ser el propietario y
chef, se le vea barriendo, lavando platos o yendo él mismo a “hacer
el mandado”.“Tengo que mostrar a mis empleados la actitud
que quiero que tengan. Es importante que un líder siempre sea el
ejemplo y que trabaje igual o más que el resto del equipo”.

Innovation, risk-taking and a positive attitude have always led
Mexican chef Carlos Gaytan to success. At his restaurant Mexique,
located in Chicago’s West Town, he’s become an ambassador
of his native country’s cuisine. Both Gaytan’s enthusiasm and
passion for food have been vital to the growth of his restaurant.
Born in Mexico, the chef emigrated to America when he was just 20
years old. Although he’d studied computer systems, after working
as a dishwasher in several Chicago restaurants, he connected
with his first love—food. With an incessant work ethic, Gaytan
eventually moved from the sink to the kitchen: Propelled by his
voracious appetite for knowledge, Gaytan observed every detail
of the business. At Mexique, the renown chef combines Mexican
cuisine with French techniques. “In Chicago we have many Mexican
restaurants that have the same style, and people get used to
the same menu. People love innovation, especially in a city like
Chicago where we have so much variety in terms of food,” he says.
Among all the Mexican restaurants in Chicago, Mexique remains
distinguished for its exceptional cuisine. Despite his success, Gaytan
continues to lead by example at his restaurant: It’s not uncommon to
find him sweeping, washing dishes or going to the market himself.
“It’s important that a leader sets the example,” he says.” “[Leaders
should] work as hard, if not harder, than the rest of the team.”
