consumer awareness of the environment and the<br />
popularity off the fresh-cut trade. As in almost all food<br />
areas, shoppers for fruit and vegetables start off by<br />
seeking certain assurances. This is the wellspring of<br />
the emotional need for information about origins,<br />
growing and handling procedures and about the quality<br />
of processed commodities. «Consumer health<br />
plays an ever bigger role in consumer demand –<br />
noted Polesana. – In effect, the concept has undergone<br />
an epistemological transformation, going from<br />
the idea of health as an item to health as a value. In<br />
other words, it has gone from an independent variable<br />
on a transcendent plane to a dependent value that<br />
results from an individual’s behaviour». Here is our<br />
individual in the guise of ConsumActor, who is proactive<br />
in purchasing items for his or her health.<br />
Sensory stimuli in the produce department<br />
Aside from order and clarity in the arrangement of<br />
merchandise, factors that are fairly well consolidated<br />
in big-retail’s business model today, Maria Angela<br />
Polesana suggests several others for the F&V floor<br />
that can be used to establish an empathetic rapport<br />
with consumers.<br />
– Communicate food safety and health: let’s not forget<br />
we’re dealing with a space, the produce department,<br />
that is charged by covers a wealth of emotively stimulating<br />
overarching themes comprised in healthy living<br />
and wellness of the body and that is pronouncedly<br />

greater health benefits for mass-market consumption;<br />
– Professional, dependable staff at consumer disposal;<br />
– Multisensory, pleasurable arrangement of produce with<br />
music suited to the department’s items that reminds consumers<br />
of nurturing Mother Nature and similar ideas;<br />
Pronounced social responsibility as, for example, in<br />
waste disposal and recycling approaches like the Last<br />
Minute Market in Bologna that collects food at good-by<br />
date and distributes it to local charities. There is also<br />
declared support for the Fair Trade movement encouraging<br />
fair income levels for farmers (social compatibility).<br />

e il successo della IV gamma. Nel reparto di frutta e verdura,<br />
come un po’ in tutto il settore alimentare, chi<br />
acquista cerca prima di tutto rassicurazione. Da qui il<br />
bisogno emotivo di avere informazioni sulla provenienza,<br />
sulle procedure di lavorazione e sulla qualità delle materie<br />
prime dei lavorati. «La salute ha un ruolo sempre più<br />
importante nelle scelte di consumo – afferma Polesana<br />
–. <strong>Il</strong> concetto ha infatti subito una trasformazione epistemologica.<br />
Si è passati, cioè, dalla concezione della salute<br />
in termini di bene a una in chiave di valore. Da variabile<br />
indipendente (ricondotta a un ordine trascendente)<br />
si è trasformata in variabile dipendente, ossia frutto del<br />
comportamento dell’individuo». Che quindi ritroviamo<br />
nella veste di attore attivo nelle scelte di consumo per la<br />
tutela di se stesso.<br />
Stimoli esperienziali nel reparto ortofrutta<br />
Oltre all’ordine e alla chiarezza nella disposizione delle<br />
merci, caratteristiche abbastanza consolidate nella<br />
moderna distribuzione, per stabilire un rapporto empatico<br />
con il consumatore, Maria Angela Polesana suggerisce<br />
alcuni elementi sui quali si dovrebbe puntare nello<br />
spazio ortofrutta:<br />
– comunicare sicurezza e salute: non dimentichiamo<br />
che si tratta di un’area, l’ortofrutta, emozionalmente<br />
ricca di temi come il viver sano, il benessere del corpo e<br />
connotata da forti preoccupazioni sul tema della salubrità<br />
e della bontà;<br />
– informare su provenienza e origine del prodotto, contenuti<br />
nutrizionali, e trattamenti subiti. Offrire quindi una<br />
tracciabilità agroalimentare per rispondere alle crescenti<br />
richieste di sicurezza alimentare da parte del<br />
consumatore;<br />
– educare, nel senso che a volte il consumatore è ignorante<br />
circa la provenienza dei prodotti, le caratteristiche<br />
distintive, le peculiarità. L’ignoranza porta anche a credere<br />
che la chimica, le tecnologie abbiano avuto solo<br />
effetti negativi; non si conoscono invece i risultati positivi<br />
che il progresso ha prodotto: centinaia di varietà,<br />
piante selezionate e più resistenti (e quindi meno bisognose<br />
di fitofarmaci) a prezzi sempre minori, per un consumo<br />
massificato e con maggior beneficio per la salute;<br />
– Personale professionale, affidabile e disponibile;<br />
– Polisensorialità, quindi composizione gradevole dell’ortofrutta,<br />
musiche adatte a questa categoria merceologica<br />
in modo da richiamare alla dolcezza della<br />
natura, ecc.;<br />
Responsabilità sociale declinata, ad esempio, nello<br />
smaltimento dei rifiuti e nel recupero degli sprechi (si<br />
pensi al last minute market di Bologna che raccoglie<br />
questi ultimi a favore di enti caritatevoli). O, ancora, in<br />
attenzione e sostegno dichiarati e rintracciabili nel riconoscere<br />
un giusto reddito a chi lavora la terra (compatibilità<br />
sociale).<br />
