<strong>The</strong> <strong>Health</strong> Bulletin<br />

This is the season <strong>of</strong> the year in our<br />

clim<strong>at</strong>e when people instinctively endeavor<br />

to procure green stuff <strong>of</strong> every<br />

available kind for food. Even the<br />

animals, such as hogs and horses, fight<br />

over bits <strong>of</strong> green food. Poultry revel<br />

in the delights <strong>of</strong> the rye p<strong>at</strong>ch, and<br />

so on. This is an age old instinct, which<br />

has guarded the health <strong>of</strong> man since his<br />

origin. In very recent years scientists<br />

have discovered a peculiar ingredient in<br />

foods called vitamins which is necessary<br />

to healthy life. <strong>The</strong>y have found<br />

th<strong>at</strong> nearly all green foods and leafy<br />

vegetables constituting the base <strong>of</strong><br />

numerous salads are rich in wh<strong>at</strong> they<br />

call Vitamin C, the anti-scurvy vitamin.<br />

<strong>The</strong>se foods are wh<strong>at</strong> we know as fresh<br />

clean raw vegetables and various fresh<br />

fruits. <strong>The</strong>y can be made into any<br />

number <strong>of</strong> delightful salads by using<br />

different kinds <strong>of</strong> salad dressings.<br />

Nearly all the dressings have vegetable<br />

oil, fruit juices, such as lemon juice<br />

and vinegar ; and eggs as the principle<br />

ingredients. <strong>The</strong>se foods have an<br />

abundance <strong>of</strong> w<strong>at</strong>er in them, are rich<br />

in mineral salts and afford bulk.<br />

Primitive man lived exclusively on<br />

nuts, fruits and leafy vegetables growing<br />

wild in the primeval forests which<br />

were his first home. <strong>The</strong>n came the<br />

era <strong>of</strong> the development <strong>of</strong> cooking and<br />

as many interpret<strong>at</strong>ions as replies. And<br />

yet there is no more important element<br />

in the curriculum <strong>of</strong> school or higher<br />

educ<strong>at</strong>ional institution than this. <strong>The</strong><br />

N<strong>at</strong>ion's <strong>Health</strong> has printed from time<br />

to time results <strong>of</strong> examin<strong>at</strong>ion <strong>of</strong> students<br />

<strong>of</strong> all grades, which have shown,<br />

without exception, the lack <strong>of</strong> appreci<strong>at</strong>ion<br />

<strong>of</strong> physical impairments on the one<br />

hand or <strong>at</strong>tempts <strong>at</strong> their correction, on<br />

the other. All schools have students<br />

suffering from physical defects which<br />

interfere with their educ<strong>at</strong>ional advancement.<br />

<strong>The</strong>se defects are the result<br />

<strong>of</strong> health neglect in early life.<br />

Many can be corrected or improved by<br />

careful health supervision and proper<br />

recre<strong>at</strong>ional<br />

activities.<br />

the use <strong>of</strong> a gre<strong>at</strong>er variety <strong>of</strong> foods<br />

including various kinds <strong>of</strong> me<strong>at</strong>s and<br />

bread from cultiv<strong>at</strong>ed grain. It is a<br />

fact th<strong>at</strong> has been observed by many<br />

writers th<strong>at</strong> the poor people <strong>of</strong> all lauds<br />

and countries, until very recent times,<br />

were the chief users <strong>of</strong> greens in their<br />

food. <strong>The</strong> rich people refused to e<strong>at</strong><br />

such foods because they regarded it<br />

poor folks diet and because they were<br />

cheap and common and plentiful. However,<br />

now th<strong>at</strong> such foods are known<br />

scientifically to be necessary to health<br />

they are utilized fully by the well-to-do,<br />

who find them just as delicious as poor<br />

folks have always done. This is well<br />

because the supply is just as plentiful<br />

as ever, and the increased demand for<br />

such food affords the opportunity to<br />

make a living for millions <strong>of</strong> people all<br />

over the earth. Thus the economic<br />

st<strong>at</strong>us <strong>of</strong> people everywhere is improved<br />

and the health <strong>of</strong> all the inhabitants<br />

<strong>of</strong> the earth promoted.<br />

by Arnold Shircliffe to the effect th<strong>at</strong><br />

"Leafy vegetables, coarse grains, bran,<br />

pure w<strong>at</strong>er, sunshine and exercise is a<br />

remediable prescription in preventive<br />

medicine accepted and agreed upon by<br />

those learned in the art <strong>of</strong> scientific<br />

nutrition."<br />

We sometimes wonder how much real<br />

benefit the entire student body receives<br />

from the highly developed <strong>at</strong>hletic<br />

activities <strong>of</strong> schools and colleges.<br />

Among the most imposing items regarding<br />

these contests are the number <strong>of</strong><br />

spect<strong>at</strong>ors and the g<strong>at</strong>e receipts. Would<br />

not the same financial outlay devoted<br />

to the physical development <strong>of</strong> the student<br />

body as a whole give gre<strong>at</strong>er return<br />

in better health and longer life<br />

While there would be fewer "heroes"<br />

<strong>of</strong> track and field, there would also<br />

probably be fewer cases <strong>of</strong> heart or<br />

kidney disease, <strong>of</strong> defective vision, <strong>of</strong><br />

other degener<strong>at</strong>ive diseases in l<strong>at</strong>er life,<br />

because abnormal tendencies would<br />

have been corrected while they were<br />

most amenable to tre<strong>at</strong>ment.<br />

for a sound program <strong>of</strong> physical
