Dear Travllive’s readers, On these first days of New Year 2016, cheerful melodies of Tet have been played everywhere, marking the arrival of Lunar New Year. Lyrics of old traditional songs have their own power to call back my memories as if I was just a child happily singing the songs with my friends day by day when Tet was coming to town. When I was studying at university, I had two Tet each year, one for patients and the old in social protection centers and one for my family.

Fresh Squid<br />

Fresh squid in Phu Quoc is considered the best, and<br />

far superior to squid in Danang, Nha Trang and<br />

Phan Thiet. Squid is caught by fishermen and quickly<br />

transported to the mainland to keep its freshness,<br />

sweetness and texture. Whether you visit seafood<br />

markets or walk along pristine beaches on the<br />

island, you can easily see familiar images of lined<br />

trays full of live squid with sparkling color-changing<br />

skin. You will be offered an array of delicious dishes<br />

made from squid such as squid hot pot, grilled squid,<br />

steamed squid with lemon grass and stewed squid<br />

with fish sauce.<br />

Herring salad<br />

Herring salad (Goi ca trich) is one of the most<br />

popular dishes on Phu Quoc. The Herring fish<br />

must be fresh with white shiny scales. After being<br />

cleaned, the meat on two sides of the fish are<br />

filleted. The most essential part of this dish is sauce<br />

which is made from chili, garlic, sugar, Phu Quoc<br />

fish sauce, and peanuts. All these ingredients are<br />

blended with water, creating a flavorsome sauce.<br />

Herring salad is often served with slices of chili,<br />

coconut and onion. When preparing this dish, you<br />

just need to choose greens such as salad, and<br />

fragrant basil, and put them on a girdle cake with<br />

herring, onion, coconut and chili. The last step is<br />

rolling them all and dipping it in the sauce.<br />
