Ingredients for short pastry:<br />
250 g smooth wheat flour, 80g butter,<br />
1 egg, 2-3 spoons of white wine,<br />
1 teaspoon of sugar, a pinch of salt.<br />
Ingredients for strudel pastry:<br />
750g smooth white flour, 1 egg yolk,<br />
2/4 l of lukewarm water, salt<br />
For the first filling:<br />
300g curd cheese, 1 egg,<br />
2 spoons sugar, 1 dl sour cream,<br />
a pinch of salt<br />
For the second filling:<br />
200g ground poppy seed,<br />
1/2 dl cream or milk,<br />
1 egg, 1 spoon sugar<br />
For the third filling:<br />
200g ground walnuts,<br />
a little sugar, cinnamon<br />
For the fourth filling:<br />
500g apples, 100g raisins,<br />
a little sugar and cinnamon<br />

Procedure: make the short pastry and the strudel pastry from the above ingredients, knead them well and<br />
let them sit. In the meantime, prepare the first and the second filling. Put all the ingredients into the bowl<br />
and mix well. For the third filling, sweeten the ground walnuts and sprinkle with cinnamon. For the fourth fill-<br />
ing, wash, peel and grate the apples, mix in sugar and cinnamon and, if desired, raisins. Then return to the<br />
pastry. Roll the short pastry, which has rested, to at the most half-inch thick and put it in a greased baking<br />
dish so that it reaches the edges. Roll out the strudel pastry, which has rested, on a sheet strewn with flour<br />
and let dry.<br />
Spread the poppy filling over the pastry in the baking dish, top it with a round-shaped layer of strudel pas-<br />
try and sprinkle it with cream or melted butter. Spread the fresh cheese filling over it and top it with the second<br />
layer of strudel pastry, sprinkling it with butter or cream and strewing it with walnuts. Cover the walnuts<br />
with another layer of pastry, sprinkle it with fat and scatter the apple filling over it, topping it with yet anoth-<br />
er layer of pastry. Sprinkle this layer with butter and cover it with one or two more layers of pastry, each of<br />
which should be greased separately. The pie should be baked for half hour on medium heat. Then pour 2 dl sour<br />
cream over it and bake for another half hour.<br />
