lime bar + restaurant is one of Newcastle’s newly opened restaurants. Already lime<br />

has achieved a great following from locals and visitors along with an outstanding<br />

review from the SMH good food guide. The reasons for this are obvious - passion<br />

and love and twice hatted head chef Lesley Taylor combining quality ingredients<br />

and an innovative menu. Add awesome cocktails, a casual lunch and breakfast<br />

menu, a great cup of grinders coffee with cutting edge architecture and art work,<br />

and lime is worth the visit.<br />

PRAWN TIAN<br />

12 medium king prawns, peeled and<br />

deveined<br />

1 avocado<br />

2 peeled eschalots, finely diced<br />

1 roasted capsicum<br />

2 tablespoons aioli<br />

1 cup baby tatsoi leaves or other baby<br />

salad leaves<br />

1/4 cup radish sprouts<br />

1 lime<br />

lemon olive oil<br />

salmon pearls<br />

salt and pepper<br />

Peel and seed roasted capsicum and slice finely.<br />

Scoop out avocado and cut into 1cm cubes and mix with aioli, salt,<br />

pepper, diced eschalots and a squeeze of lime.<br />

Place a 7cm metal ring, cookie cutter or egg ring on a plate and spread<br />

sliced capsicum evenly over bottom, spoon in prepared avocado mix<br />

and fill to a height of around 3cm.<br />

Arrange prawns on top and slide ring off.<br />

Spoon roe around tian.<br />

Toss leaves and radish sprouts in lemon oil and lime juice, place on top of<br />

prawns. Drizzle lemon oil around plate.<br />
