CRUMBED CALAMARI FOR SEAFOOD PLATTER<br />

Fried Calamari<br />

2 eggs beaten<br />

100ml milk<br />

50ml cream<br />

salt and pepper<br />

100g plain flour<br />

100g fine bread crumbs<br />

150g calamari rings<br />

Coat calamari in flour, mix together the eggs, milk, cream. Coat the<br />

calamari in the egg mixture, then in the bread crumbs. Deepfry for 30 to<br />

40 seconds.<br />

Arrange fresh seasonal fruit around the edge of a platter then a layer<br />

crumbed calamari and seafood of your choice.<br />

Garnish with lemon wedges.<br />
