HUMMINGBIRD CAKE<br />

1 1/2 cups plain flour<br />

1 cup caster sugar<br />

1/2 tablespoon ground cinnamon<br />

1/2 tablespoon bicarb soda<br />

3 eggs, lightly beaten<br />

3/4 cup oil<br />

3/4 cup chopped pecans or walnuts<br />

2 cups mashed over-ripe banana<br />

1/2 cup undrained crushed pineapple<br />

60g softened cream cheese<br />

30g butter<br />

1 tablespoon vanilla essence<br />

11/2 cups icing sugar<br />

Grease pan, line base with baking paper and preheat oven 180°C.<br />

Sift flour, sugar, cinnamon and soda in a large bowl.<br />

Stir in eggs, oil, nuts, banana and pineapple. Stir gently until just<br />

combined.<br />

Bake for 50-60 minutes.<br />

Beat the cream cheese, vanilla essence and butter until light. Gradually<br />

beat in icing sugar. When the cake is cold, spread on icing.<br />
