The Olive Branch Café<br />
The Salvation Army Olive Branch Café is a unique restaurant in Australia. The Olive<br />
Branch is fully operated by young people training in Hospitality Operations, under<br />
the supervision of professional industry-qualified staff. The emphasis is on training, but<br />
the ever-changing menu offers quality, creative tasty meals and light snacks. The<br />
Olive Branch Café is open to the public for breakfast, morning and afternoon tea<br />
and lunches on weekdays.<br />
ORANGE AND CINNAMON CHICKEN ON BALSAMIC SALAD<br />
WITH CRISPY NOODLES<br />
Marinade<br />
1kg chicken breast or tenderloins<br />
300ml orange juice<br />
60ml balsamic vinegar<br />
2 teaspoons crushed garlic<br />
2 teaspoons coriander seeds<br />
2 tablespoons honey<br />
2 tablespoons chopped coriander<br />
Dressing<br />
60ml balsamic vinegar<br />
120ml extra virgin olive oil<br />
1 teaspoon crushed garlic<br />
1 teaspoon sugar<br />
1 teaspoon chopped basil<br />
salt and pepper to taste<br />
Salad<br />
400g mescalin lettuce<br />
1 punnet of cherry tomatoes, cut in two<br />
1 Spanish onion, finely sliced<br />
1 Lebanese cucumber, finely sliced<br />
3 spring onions sliced<br />
250g Hokkien noodles<br />

Combine orange juice, balsamic vinegar, crushed garlic, coriander<br />
seeds, cinnamon, honey and chopped coriander. Coat chicken with<br />
marinade and refrigerate overnight.<br />
Deep-fry Hokkien noodles in hot oil until crisp. Set aside.<br />
Heat a large non-stick frying pan. Cook chicken breasts, three minutes<br />
each side or until cooked through.<br />
Combine the dressing ingredients, except for the olive oil. Whisk together,<br />
gradually adding the olive oil. Season.<br />
To assemble, combine the lettuce, cherry tomatoes, Spanish onion,<br />
cucumber, and spring onions. Divide into servings. Place cooked chicken<br />
on top of salad and arrange the noddles.<br />
