VEAL OSSO BUCCO WITH MINTED POTATOES AND FRESH GREENS<br />

8 pieces Osso Bucco veal<br />

celery<br />

8 baby chats<br />

mint<br />

clarified butter<br />

250g fresh beans<br />

2 carrots<br />

2 onions<br />

1 litre veal stock<br />

100ml Vermouth<br />

250ml red wine<br />

oregano<br />

1 cup flour<br />

salt and pepper to taste<br />

Coat Osso Bucco with seasoned flour and seal in a hot pan, remove and<br />

place in an oven tray.<br />

Add diced celery, carrot, onion, vermouth, red wine, fresh oregano and<br />

cover 3/4 with veal stock.<br />

Cover with a lid and cook at 180°C for about one hour, remove lid and<br />

cook for a further 10 minutes.<br />

Remove Osso Bucco from pan, place sauce back on heat, reduce and<br />

season.<br />

Blanch potato and beans, add mint and serve.<br />

Place Osso Bucco on top of potatoes, add beans and cover with sauce.<br />
