SEARED YELLOW FIN TUNA<br />
250g yellow fin tuna steak<br />
sea salt<br />
cracked black pepper<br />
50g rocket leaves<br />
4 cherry tomatoes<br />
1 washed medium potato<br />
extra virgin olive oil<br />
1 kaffir lime leaf<br />
1/2 lemon<br />
1 garlic glove, crushed<br />

Slice potato thinly and sautè until golden brown.<br />
In hot pan place cherry tomatoes and crushed garlic and sautè quickly,<br />
add chopped kaffir lime leaf.<br />
Mix rocket leaves with a little sea salt and crack pepper, drizzle a<br />
tablespoon of extra virgin olive oil and squeeze 1/2 a lemon over.<br />
Season tuna steak with sea salt and pepper, heat pan with olive oil on<br />
high heat and sear tuna for 30 seconds each side.<br />
