Amici Italian Restaurant<br />

Chef Andrew Profili uses seafood to create his simple and tasty dishes such as his<br />

signature dish Amici Fritto Misto which translates to mixed fritters.<br />

The Tuscan-style cooking of Amici has made this Italian restaurant a restaurant<br />

worthy of a quick return.<br />

FRITTO MISTO<br />

1/4kg scampi<br />

1/4kg balmain bugs<br />

1/4kg scallops<br />

1/4kg green prawns<br />

200ml extra virgin olive oil<br />

1 teaspoon sea salt<br />

1 bunch coriander<br />

1 bunch parsley<br />

Aioli<br />

2 egg yolks<br />

1/2 tablespoon mustard<br />

20ml white wine vinegar<br />

250ml light olive oil<br />

1/2 lemon<br />

Chop herbs finely, mix oil, herbs and sea salt. Season with fresh pepper.<br />

Dip seafood in mixture and cook on hot plate or grill.<br />

Add all the aioli ingredients into the processors and blend until smooth.<br />

Present by stacking biggest pieces first to smaller on top. Serve with aioli.<br />
