TOASTED BRIOCHE WITH BINNORIE FETTA, MUSHROOMS AND<br />

BAKED TOMATOES<br />

Brioche<br />

20g fresh yeast<br />

10g sugar<br />

125ml milk<br />

280g flour<br />

2 eggs<br />

180g butter<br />

Tomatoes and Mushrooms<br />

6 large Roma tomatoes<br />

5g sea salt<br />

6 large flat mushrooms<br />

5g black pepper<br />

1 clove garlic<br />

50g olive oil<br />

10g thyme<br />

10g sage<br />

Binnorie Fetta, crumbed<br />

Add yeast, sugar and milk in a bowl allow to sit for 15 minutes.<br />

Add mixture to 280g of flour and work into a smooth dough.<br />

Add eggs one at a time to dough and work in well.<br />

Fold in softened butter into dough.<br />

Place into large greased bread tin and allow to double in size.<br />

Bake in oven at 190°C for 20 minutes.<br />

Halve the tomatoes and peel the mushrooms.<br />

Mix oil, garlic, thyme and sage in a bowl. Pour over tomatoes and<br />

mushrooms and bake at 180°C for 10 minutes.<br />

Slice brioche and toast, add mushroom and tomato mixture with washed<br />

rocket the sprinkle with Binnorie Fetta to taste.<br />
