Morpeth Garden Café<br />

Located at the rear of the historic sandstone Surgeon’s Cottage, the courtyard<br />

setting and garden ambience of the Morpeth Garden Café is the perfect place to<br />

relax with coffee after browsing through the many antique and giftware shops that<br />

SPICED RHUBARB CAKE<br />

60g butter<br />

1 1/2 cups firmly packed brown sugar<br />

1 teaspoon vanilla extract<br />

2 eggs<br />

1 cup self raising flour<br />

1 cup plain flour<br />

1 teaspoon cinnamon<br />

1 cup sour cream<br />

500g rhubarb, cut into 2cm lengths<br />

2/3 cup brown sugar<br />

2 teaspoons cinnamon, extra<br />

Preheat the oven to 180°C and prepare a deep 23cm round<br />

spring form tin by greasing and lining base.<br />

Cream butter and brown sugar, add vanilla. Beat in eggs one at a<br />

time.<br />

Add both flours and the sour cream and mix.<br />

Fold rhubarb through the cake mixture.<br />

Spread into the prepared tin.<br />

Combine extra brown sugar and cinnamon and sprinkle over the<br />

top of the cake.<br />

Bake for 1 1/2 - 2 hours. Leave to cool in the tin.<br />

Serve with a dollop of thickened cream.<br />
