JEWFISH FILLET WITH THAI BEANSHOOT SALAD MANGO & LIME DRESSING<br />

4 x 200g jewfish fillet<br />

4 tablespoons olive oil<br />

Beanshoot Salad<br />

250g bean shoots<br />

1 telegraph cucumber, cut into strips<br />

1 carrot, cut into strips<br />

100g snow pea sprouts<br />

100g mizuna leaves<br />

1 red capsicum, cut into strips<br />

coriander leaves<br />

Thai basil leaves<br />

Thai mint leaves<br />

1/2 mango, cut into strips<br />

Dressing<br />

1 cup mayonnaise<br />

1 finely chopped chilli, or 2 if you like<br />

it hot<br />

1 tablespoon brown sugar<br />

1/2 mango, pureed<br />

2 limes zested and squeezed<br />

4 cloves of garlic<br />

Toss all salad ingredients together. Mix chilli, sugar, lime zest and juice,<br />

crushed garlic and mango. Add mayonnaise.<br />

Add salt and taste for heat (chilli) and sharpness from the limes. Add<br />

more lime juice if needed.<br />

Lightly flour the jewfish and panfry until cooked.<br />

Mix dressing with salad, place in serving bowl and top with jewfish. Drizzle<br />

a little dressing over the fish.<br />
