Tillermans<br />

Situated in the old general store on the banks of the Myall River, Tillermans is<br />

a great place to relax over coffee, enjoy local farm fresh bacon and eggs,<br />

or sample the award-winning modern Australian lunch and dinner menu. The<br />

rustic dining room features tables made from old sewing machines, 100-year-old<br />

Bentwood chairs and photographs depicting the history of the area. Outdoor<br />

seating and two private dining rooms are also available.<br />

VANILLA AND ALMOND PUDDING WITH LOCAL BERRIES<br />

170g unsalted butter<br />

200g icing sugar mixture<br />

50g plain flour<br />

130g almond meal<br />

1 vanilla bean<br />

6 egg whites<br />

Preheat oven 200ºC. Prepare four dariole molds. Melt butter and cool<br />

and slit the vanilla bean and scrape the seeds into the flour.<br />

Mix together icing sugar, flour and almond meal. Gently whisk egg whites<br />

until broken. Fold all ingredients together.<br />

Fill molds to about 2/3 full and bake for about 15 to 20 minutes until<br />

cooked to feel.<br />

Turn out and serve with fresh seasonal berries and cream.<br />
