FIVE-SPICE KING PRAWNS<br />

5 green king prawns with tails on<br />

1 egg white, beaten<br />

1/2 green capsicum, diced<br />

1/2 red capsicum, diced<br />

Five Spice Salt<br />

1 teaspoon five-spice powder<br />

1 teaspoon ginger powder<br />

2 teaspoons table salt<br />

1/2 teaspoon minced garlic<br />

2 small hot chillies, finely chopped<br />

2 tablespoons cornflour<br />

Toss salt in hot pan until dry. Turn off heat, stir in ginger and Five-Spice<br />

powder. Mix thoroughly and put into dry container.<br />

Place enough vegetable oil in a wok to shallow fry prawns. Heat oil.<br />

Coat prawns in egg white. Add cornflour and mix throughout.<br />

Place prawns, individually in hot oil and cook until golden and crispy.<br />

Drain off oil.<br />
