BAKED SNAPPER WITH A PETIT HERB AND RED PEPPER SALAD<br />

4 whole baby snapper, cleaned with<br />

fins trimmed<br />

1 red capsicum, julienned<br />

10g ginger, julienned<br />

5 cloves garlic, julienned<br />

200ml sesame oil<br />

10g mint leaves<br />

10g continental parsley leaves<br />

10g basil leaves<br />

10g coriander leaves<br />

5g dill leaves<br />

10ml extra virgin olive oil<br />

sea salt<br />

cracked pepper<br />

Fry julienne vegetables in sesame oil until crisp. Drain on paper and set<br />

aside. Mix herbs together and set aside.<br />

Score sides of snapper three times. Season with sea salt and pepper.<br />

Seal in fry pan on both sides. Cook in 180°C oven for about 10 minutes.<br />

Place fish on plate.<br />

Mix fried vegetables with herbs. Toss in olive oil. Season and place on fish<br />

to garnish.<br />
