SMOKED SALMON AND CIABATTA STACK WITH LEMON DILL<br />

CRÈME FRAICHE<br />

4 slices smoked salmon<br />

1/2 avocado<br />

3 slices ciabatta bread<br />

1/2 Spanish onion<br />

1 roast capsicum<br />

wild rocket leaves<br />

sour cream<br />

Lemon And Dill Crème Fraiche<br />

fresh lemon juice<br />

sour cream<br />

fresh dill chopped<br />

salt & pepper<br />

Avocado Salsa<br />

avocado, mashed<br />

sweet chilli sauce<br />

1/2 Spanish onion, finely diced<br />

lemon juice<br />

sour cream<br />

salt and pepper<br />

cumin to taste<br />

Char ciabatta bread.<br />

Blend ingredients to make crème fraiche. Add lemon, dill and seasoning<br />

to taste.<br />

Mash avocado and add the rest of the ingredients to taste to<br />

make salsa.<br />

Arrange into layers starting with the bread followed by the avocado<br />

salsa, roast capsicum, and salmon. Drizzle with crème fraiche then top<br />

with fine slices of Spanish onion and rocket leaves.<br />
