2 large blue swimmer crabs<br />

6 Balmain bugs<br />

4 natural oysters<br />

6 fresh water yabbies<br />

fresh seasonal fruit<br />

seafood sauce<br />

1 lemon<br />

1 finger bowl<br />

1 lobster (optional)<br />

Hot produce<br />

4 Kilpatrick oysters<br />

4 Mornay oysters<br />

6 tempura battered whiting fillets<br />

4 marinated squid skewers<br />

4 crumbed prawn cutlets<br />

6 oven roasted scallops<br />

On a cold Chinese san pan arrange fruits, salad, seafood.<br />

Garnish with lemon twists and parsley.<br />

Cook off oysters, scallops.<br />

Deep fry whiting fillets, prawn cutlets.<br />

Barbecue the squid skewers.<br />

Place into Chinese steamer basket and put on platter.<br />
