Situated within a historic Maitland home, Anoushka’s Café offers a unique<br />

and relaxed dining experience. Built in 1837 as an inn, ‘Roseneath’ exudes the<br />

ambience of days gone by. Guests may choose to dine in the sunny courtyard,<br />

main dining room, or the ‘green room’ with its cosy open fire. Anoushka’s offers<br />

an extensive breakfast and lunch menu with daily specials and a sumptuous<br />

array of homemade cakes and desserts. Licensed & BYO (Wine only)<br />

PISTACHIO ICECREAM<br />

5 eggs<br />

1/2 cup sugar<br />

1 teaspoon of vanilla essence<br />

300ml cream<br />

500g pistachio nuts<br />

1/4 cup honey<br />

In a food processor, combine nuts and honey until pistachios are finely<br />

chopped. Set aside.<br />

Separate the eggs. In a small mixing bowl beat the egg whites while<br />

slowly adding half the sugar. Beat until stiff peaks form.<br />

In a second bowl, beat the yolks while adding the second measure of<br />

sugar until yolks become thick. Add vanilla and gently fold into the egg<br />

whites.<br />

Beat cream until thick, combine with nuts and honey and fold into egg<br />

mixture. Freeze until set.<br />
