INGREDIENTS<br />

Large green chillies 16 For batter<br />

Boiled potatoes 500 gms Gram flour (.besan) 1 cup<br />

Red chilli powder 1 tblspn Baking powder 1 tspn<br />

Garam masala powder 1 tblspn Red chilli powder 1 tspn<br />

Chaat masala 1 tspn Salt as per taste<br />

Chopped green coriander 1 tblspn Oil for deep-frying<br />

Salt as per taste<br />

METHOD OF PREPARATION<br />

X Slit green chillies and remove seeds.<br />

^25- Peel and grate boiled potatoes and add red chilli powder, garam masala<br />

powder, chaat masala, green coriander and salt. Mash and mix well. Divide<br />

this into sixteen equal portions.<br />

3 Stuff a little <strong>of</strong> this mixture into the green chillies and also cover the chillies<br />

with this potato mixture.<br />

-4- Now prepare a thick batter using besan, baking powder, red chilli powder,<br />

salt and about one cup <strong>of</strong> water. Let the batter stand for ten minutes.<br />

£» Heat oil in a kadai to a moderate temperature. Dip stuffed green chillies<br />

into the besan batter and deep fry until golden brown.<br />

Chef's Tip : Select large sized green chillies for this recipe. It will not only give it a nice<br />

definite shape but also will not be very hot.<br />
