INGREDIENTS<br />

Refined Wheat Flour (rnaida) 4 cups Salt 1 tspn<br />

Milk 1 cup Onion seeds 2 tspns<br />

Baking powder 1 tspn Egg 1<br />

Water as required Sugar 2 tspns<br />

Soda bi-carbonate (baking soda) ..M tspn Butter 2 tspns<br />

Oil 2 tblspns Yogurt 2 tblspns<br />

72 METHOD OF PREPARATION<br />

X Sieve flour with baking powder, baking soda and salt. Add sugar, egg, milk,<br />

yogurt and water. Knead well into a medium s<strong>of</strong>t dough.<br />

Apply a little oil and keep it under wet cloth for one hour.<br />

.3 Make eight equal portions <strong>of</strong> the dough. Apply a little oil and put the onion seeds<br />

on top.<br />

Press sides first and then centre <strong>of</strong> die dough ball. Give a round flat shape. Pick in<br />

hand and pat to give it a round shape <strong>of</strong> about six inches diameter.<br />

£5 Stretch it from one side to give a triangular shape. Put it on a cloth and put it on<br />

a pre-heated tandoor wall or cook in a pre-heated oven (200 degrees Celsius).<br />

€.3 Remove using skewers when it is crisp and brown on both sides.<br />

T" Serve hot, topped with butter.<br />

Chef's Tip : If you don't consume eggs, proceed with this recipe without egg. The loss <strong>of</strong> taste<br />

and texture would hardly be noticeable.
