INGREDIENTS<br />

French beans 10-12 Green chillies 3-4<br />

Carrots 2 medium sized Ginger 1 two inch piece<br />

Capsicums 2 medium sized Coriander leaves Vi cup<br />

Cauliflower l A flower Oil 4 tblspns<br />

Tomatoes 3 large sized Green peas l A cup<br />

Onions 2 medium sized Turmeric powder Vi tspn<br />

Coriander seeds 1 tblspn Coriander powder 1 tblspn<br />

Cumin seeds 1 tspn Red chilli powder 1 tspn<br />

Dried red chillies 4-5 Salt as per taste<br />

Garlic 12-15 cloves Garam masala powder 1 tspn<br />

METHOD OF PREPARATION<br />

1 String the beans and peel the carrots. Halve the capsicums and remove<br />

the seeds. Cut all the vegetables into W cubes. Separate the cauliflower<br />

into small florets. Wash tomatoes and chop them roughly. Peel onions<br />

and slice them. Peel and wash ginger.<br />

Grind coriander and cumin seeds and three red chillies coarsely.<br />

Grind garlic, green chillies and half the ginger to a paste. Make julienne<br />

<strong>of</strong> the rest <strong>of</strong> the ginger. Finely chop the coriander leaves.<br />

-4r Heat oil in a pan. Add the coarsely ground masala. Add the sliced onions<br />

and saute till golden brown.<br />

EZ Add ginger-garlic-green chilli paste and saute for one minute. Add<br />

the vegetables except capsicum and stir. Cook covered on low heat till<br />

carrots are almost done. Sprinkle a little water if necessary.<br />
