INGREDIENTS<br />
Cauliflower (small sized) 2 Cumin powder 1 tspn<br />
Salt as per taste Red chilli powder 1 tblspn<br />
Turmeric powder 1 tspn Coriander powder 1 tblspn<br />
Onions 2 medium sized Garam masala powder 1 tspn<br />
Melon seeds V2 cup + 1 tspn Tomato puree V2 cup<br />
Oil 3 tblspns Mawa (khoya) Vacup<br />
Ginger paste 1 tblspn Fresh cream V2 cup<br />
Garlic paste 1 tblspn Chopped coriander leaves ....2 tblspns<br />
METHOD OF PREPARATION<br />
1 Remove stalks from cauliflower. Boil cauliflower in salted water with<br />
V2 tspn turmeric powder till half cooked. Peel onions and grate them. Soak<br />
V2 cup melon seeds in water for an hour and grind to a smooth paste.<br />
2. Heat oil in a kadai. Add gfated onions and saute until golden brown in<br />
colour.<br />
3 Add ginger paste, garlic paste, cumin powder, red chilli powder, coriander<br />
powder, remaining turmeric powder, garam masala powder and salt. Stir<br />
for half a minute.<br />
^fc Add tomato puree and cook till oil leaves the masala. Add melon seed<br />
paste dissolved in 1 cup <strong>of</strong> water. Bring to a boil. Add mawa. Mix well.<br />
E» Add half-boiled cauliflower and cook covered on low heat or in a pre-heated<br />
oven for fifteen minutes. Top with fresh cream and simmer for five<br />
minutes.<br />
