Hot brie canape<br />
with greens<br />
Peel, de-seed and thinly slice a pear. Further cut<br />
the slices into 0.5 cm lengths, drizzle some pear<br />
liqueur onto the pear strips and set aside. Meanwhile<br />
cut a wedge of brie into two equal horizontal parts then<br />
slice each of these equal parts into smaller pieces. Put<br />
one half of the cheese onto a baking tray lined with wax<br />
paper, then top with the pear strips and add some<br />
parsley and cayenne pepper before covering with the<br />
remaining slices of brie. Gently press the layers<br />
together and bake in a pre-heated oven at<br />
220°C for five minutes. Remove from<br />
oven and serve immediately with<br />
mixed greens.<br />

Brie, the cheese of kings<br />
“Oh my sweetheart, I am sending you this nice<br />
piece of Brie de Meaux together with my tender<br />
love!” wrote Charles de Orleans, a citizen of<br />
Paris, in his letters to his beloved in 1407.<br />
It seems that brie was truly the best gift<br />
in France during the Middle Ages. Historians<br />
claim that Queen Margot and King<br />
Henry IV favoured this sort very much,<br />
and it is also understood that Blanche<br />
de Navarra, the countess of Champagne,<br />
traditionally sent brie to King Philip August<br />
who could be whipped into a frenzy<br />
merely by tasting the cheese.<br />
Brie is one of the oldest varieties of cheese in France, though<br />
the exact date it was first made remains a mystery. However,<br />
chroniclers recorded the words of Charlemagne, the Holy Roman<br />
Emperor, who in 774 said of it, “I have just tasted one of the most<br />
delicious meals I ever knew”.<br />
It is forgivable to mistake brie for camembert, though the fat content<br />
of brie is a bit lower than that of camembert. Brie is normally<br />
shaped into flat discs some 30 to 60 cm in diameter and some<br />
3 to 5 cm in height. This mild cheese is rich in zinc, which aids<br />
digestion, and its mouldy crust has a noticeable odour, though it<br />
is nonetheless safe to eat.<br />
There are three types of brie, all of them named small towns lying<br />
to the east of Paris: Brie de Meaux, Brie de Melun and Brie de<br />
Coulomiers.<br />
