MARINADES<br />

Use either of these to marinate 1 lb boneless or 1½ lbs<br />

bone-in poultry, beef or pork.<br />

Terriyaki Marinade<br />

Ingredients<br />

2 tbsp. low-salt soy sauce<br />

2 tbsp. cooking sherry or apple juice<br />

1 tsp. dried ginger<br />

2 tbsp. canola oil<br />

1 tsp. brown sugar<br />

1 clove garlic, minced<br />

½ tsp. pepper<br />

Herb Marinade*<br />

Ingredients<br />

½ cup lemon juice<br />

1 tsp. honey<br />

1<br />

⁄3 cup cooking oil or olive oil<br />

1 clove garlic, finely chopped<br />

1 tbsp. chopped fresh parsley<br />

1 tsp. dried basil<br />

¼ tsp. dried oregano<br />

Instructions<br />

Combine ingredients and mix well. Place poultry, beef or<br />

pork in a sealable plastic bag. Pour marinade into the bag<br />

and refrigerate 4 to 24 hours. Remove meat from the bag<br />

and discard the marinade. Cook meat as directed.<br />

*For those on a low potassium diet, count Herb Marinade<br />

as ½ fruit serving.<br />
