Ingredients<br />

1 cup cooked zucchini slices<br />

(or any other low potassium cooked vegetable)<br />

1 cup chopped onion<br />

1<br />

⁄8 tsp. pepper<br />

1<br />

⁄8 tsp. basil<br />

¼ tsp. garlic powder<br />

½ cup CoffeeRich ®<br />

2 tbsp. olive oil<br />

5 eggs or 1 ¼ cups Eggbeaters ®<br />

Instructions<br />

1. Cook onion in olive oil until transparent.<br />

2. Add zucchini, garlic powder, basil and pepper.<br />

3. Stir well and cook until zucchini is heated.<br />

4. Mix eggs or Eggbeaters ®<br />

with non-dairy creamer and<br />

pour over vegetables. Stir and scrape mixture from<br />

sides of pan while cooking. Serve.<br />

Makes 4 servings<br />

1 serving = ½ cup<br />

= 1 protein and 1 vegetable choice<br />

For extra zip-add 1-2 dashes of Tabasco Sauce in Step #4<br />
