CHICKEN FINGERS<br />

Ingredients<br />

¾ cup breadcrumbs<br />

2 tbsp. parmesan cheese<br />

¼ tsp. pepper<br />

1 ½ tsp. dried thyme<br />

¾ tsp. each garlic & onion powder<br />

4 chicken breast (halves), boneless, skinless<br />

(cut into 1" strips)<br />

¼ cup non-hydrogenated margarine, melted<br />

Instructions<br />

Preheat oven to 400°F. Combine first 5 ingredients. Dip<br />

chicken into melted margarine; then coat with mixed<br />

ingredients. Place on lightly greased rack on a cookie sheet.<br />

Bake 10 minutes, turn and bake 10 minutes more.<br />

Makes 12 chicken fingers.<br />

1 chicken finger= 1 protein, ½ starch<br />

Honey Dill Dipping Sauce<br />

for chicken fingers<br />

Ingredients<br />

½ cup mayonnaise<br />

¼ cup liquid honey<br />

½ tsp. dried dill weed<br />

Instructions<br />

Mix together. Refrigerate 30 minutes or more.<br />

1 Tbsp. dipping sauce= ½ starch<br />
