Apple Muffins<br />

Ingredients<br />

1 cup (250 ml) apples, peeled and diced<br />

1<br />

⁄3 cup (80 ml) applesauce<br />

¾ cup (190 ml) milk<br />

1 ½ tsp. (7.5 ml) baking powder<br />

1<br />

⁄3 cup (80 ml) white sugar<br />

1 ¾ cup all-purpose flour<br />

¼ tsp. (1.25 ml) ground ginger<br />

½ tsp. (2.5 ml) ground cinnamon<br />

Instructions<br />

1. Mix together the sugar, cinnamon and ginger.<br />

2. In a large bowl, mix flour, baking powder, sugar<br />

mixture, salt, milk and applesauce. Do not over-beat,<br />

as the muffins will get tunnels from the air pockets.<br />

3. Stir in the diced apples.<br />

4. Spoon the batter into 12 greased muffin cups.<br />

5. Bake at 400°F for 20 to 25 minutes<br />

or until tops spring back when touched lightly.<br />

6. Serve after muffins have cooled down<br />

(approximately 30 minutes).<br />

Recipe makes 12 small muffins<br />

1 serving = 1 muffin<br />

= 1 starch<br />
