Summer Grilled<br />
Veggie Sandwich<br />
Ingredients<br />
1 medium eggplant<br />
1 red pepper<br />
1 medium onion<br />
4 ounces natural Swiss cheese<br />
4 tbsp. fresh tarragon or 4 tsp. dried<br />
2 tbsp. olive oil<br />
2 tbsp. balsamic vinegar<br />
2 12" submarine roll (white, sourdough or French), cut in half<br />
Instructions<br />
1. Cut eggplant and onion into 4 equal slices.<br />
2. Cut bell pepper into 4 equal pieces.<br />
3. Mix tarragon, olive oil and vinegar together. Pour<br />
over vegetables to marinate for at least 15 minutes.<br />
4. Heat grill to medium heat. Place vegetables on the<br />
grill and cook for 2 to 3 minutes per side until tender.<br />
5. Build sandwich with French roll, 1 slice eggplant,<br />
onion, and 1 piece bell pepper.<br />
6. Top with 1 slice cheese, and sprinkle additional<br />
vinegar if desired.<br />
Serves 4<br />
