<strong>Renal</strong> <strong>Friendly</strong><br />
Bran Muffins<br />
Instructions<br />
1. Preheat oven to 400ºF and lightly grease muffin tins<br />
2. MIX:<br />
¼ cup oil<br />
1 egg<br />
1 tsp. vanilla<br />
1<br />
⁄3 cup honey<br />
1 cup applesauce or crushed pineapple drained<br />
3. ADD:<br />
1 cup white flour<br />
1 cup wheat bran<br />
1 ½ tsp. baking soda<br />
¼ tsp. cream of tartar<br />
4. Mix together, spoon into muffin tins and bake immediately.<br />
Cream of tartar and baking soda will only rise once<br />
so do not delay getting the muffins into the oven.<br />
5. Bake for 15-20 minutes.<br />
Makes 12 muffins<br />
1 serving = 1 muffin<br />
= 1 starch, 1 low potassium fruit<br />
