CHICKEN SATAYS<br />
Ingredients<br />
4 chicken breasts (about 1 lb/500g)<br />
2 tbsp. olive oil<br />
2 tbsp. red wine vinegar<br />
1 tbsp. McCormick No Salt Added Table shake seasoning ®<br />
24 bamboo skewers<br />
Instructions<br />
Cut chicken into 24 thin strips, ½ in (1 cm) wide. In medium<br />
bowl or self-seal plastic bag, mix together oil, vinegar and<br />
McCormick No Salt Added Table Shake Seasoning. Add<br />
chicken strips, and toss to coat. Cover and refrigerate at<br />
least 30 min., or overnight, turning occasionally.<br />
Meanwhile, soak bamboo skewers in water for 30 mins,<br />
Remove chicken from marinade and thread onto each<br />
skewer. Grill or broil about 5 min. per side or until no<br />
longer pink. Discard any remaining marinade.<br />

Satay Peanut Sauce<br />
In small saucepan, combine:<br />

¼ cup (50 ml) peanut butter<br />
¼ cup water<br />
1 tbsp. (15 ml) sodium-reduced soy sauce<br />
1 tbsp. (15 ml) lime juice<br />
2 tbsp. (30 ml) apricot jam<br />
1 ½ tsp. McCormick ®<br />
No Salt Added Table Shake Seasoning<br />
Heat for 3–5 min. over medium heat.<br />
