Light Sweet<br />
& Sour Chicken<br />
Ingredients<br />
2 cup chicken, diced<br />
1 tsp. cornstarch<br />
1 tbsp. oil<br />
½ cup onion, chopped<br />
1 cup green pepper, chopped<br />
1 tbsp. cornstarch<br />
¼ cup sodium reduced soy sauce<br />
2 tbsp. vinegar<br />
1 tbsp. brown sugar<br />
2 tbsp. white sugar or artificial sweetener<br />
½ tsp. ground ginger<br />
½ tsp. garlic powder<br />
1 can (14 oz. or 398 ml) crushed pineapple<br />
Instructions<br />
1. Dice chicken. Place in mixing bowl. Toss with the<br />
1 tsp. of cornstarch.<br />
2. Add oil to large frying pan or wok. When hot, add chicken.<br />
Stir fry 1-2 minutes. Add chopped onion. Stir fry until lightly<br />
brown. Remove from pan and set aside.<br />
3. Drain pineapple, reserve juice.<br />
4. In a jar, shake together the 1 tbsp. cornstarch, soy sauce,<br />
vinegar, brown sugar, white sugar, ginger, garlic powder and<br />
pineapple juice.<br />
5. Over medium heat, add sauce mixture, crushed pineapple<br />
and chopped green pepper to frying pan or wok. Cook<br />
until mixture lightly boils and thickens, stirring often.<br />
6. Add cooked chicken. Cook until heated through.<br />
Makes 4 servings<br />
1 serving = 1 cup.<br />
= 2 protein, 1 medium potassium vegetable/fruit<br />
Serve with rice.<br />
