Irish Stew<br />
Ingredients<br />
10 ounces (300g) beef cubes<br />
1 tbsp. oil<br />
2 onions, finely chopped<br />
1 clove garlic, minced<br />
1 ½ cups low sodium beef broth<br />
½ cup sliced carrots, boiled*<br />
1 cup potatoes, cubed and boiled*<br />
1 bay leaf<br />
½ tsp. rosemary<br />

⁄8 tsp. pepper<br />
½ tsp. parsley<br />
Instructions<br />
1. Brown beef cubes in ½ tbsp. oil. Remove from pan.<br />
2. Cook garlic and onion in remaining oil until browned.<br />
3. Add broth and seasonings; cover and simmer for one hour.<br />
4. Add vegetables; cook until stew is full heated.<br />
*If you are following a low potassium diet, you can decrease<br />
the potassium content by soaking them in water for at least<br />
4 hours or double-boiling (do not save water).<br />
Makes 4 servings<br />
1 serving = 2 protein, 1 medium potassium vegetable<br />
