Egg Sandwiches<br />
Ingredients<br />
6 large eggs (or 8 small or medium eggs)<br />
½ cup finely chopped celery<br />
¼ cup shopped green pepper (optional)<br />
2 tbsp. finely chopped green onion<br />

⁄3 cup mayonnaise<br />
A dash of pepper or other salt-free seasoning<br />
12 slices of bread<br />
Instructions<br />
Place eggs in enough cold water to cover them completely.<br />
Bring to a rolling boil over high heat.<br />
Reduce heat to a MEDIUM boil and cook for an additional<br />
12 minutes.<br />
Place eggs in cold water until eggs are cool to touch.<br />
Refrigerate eggs until ready to peel.<br />
Peel eggs and mash in a bowl.<br />
Add the other ingredients to bowl and mix together.<br />
Spread egg mixture onto bread.<br />
Makes 6 sandwiches.<br />
1 sandwich = 2 starch & 1 protein<br />
