Confetti Rice<br />

Ingredients<br />

1 pound (454 g) lean ground beef<br />

1 tsp. margarine<br />

1 cup rice, white, long grain, raw<br />

2 cups beef broth, sodium-reduced<br />

1 ½ cups frozen mixed vegetables<br />

1 ½ tbsp. Garlic & Herb Seasoning (Mrs. Dash ®<br />

or McCormick’s No Salt Added ®<br />

)<br />

Instructions<br />

1. In a large frying pan, brown ground beef over medium<br />

heat until no pink color remains. Pour off fat.<br />

2. Stir in Garlic & Herb Seasoning and margarine.<br />

3. Stir in raw rice, add beef broth.<br />

4. Let mixture come to a boil over medium heat. Turn heat to<br />

low, cover pan with lid, and let simmer about 10 minutes.<br />

5. Remove lid; mix well. Add frozen vegetables and mix<br />

again, (if mixture is dry, add a small amount of water).<br />

6. Cover. Simmer another 5-10 minutes until rice and<br />

vegetables are cooked.<br />

Makes 6 servings<br />

1 serving = 3 protein, 2 starch, 1 medium potassium<br />

vegetable choice<br />
