• Vegetable Quinoa<br />

Bowl: stir fry your selection<br />

of vegetables (try squash, bell<br />

peppers, onions, carrots, etc.) and<br />

stir it into a bowl of quinoa. Enjoy<br />

this hot, or stick it in the fridge for<br />

a refreshing meal for later. This is<br />

a nice substitution for fried rice.<br />

• Salad Mix: sprinkle a fair<br />

share of quinoa over spinach<br />

leaves. Toss in olives, tomatoes,<br />

dried cranberries, nuts - anything<br />

you like to put in salads.<br />

Then douse it with your<br />

favorite dressing.<br />

• Quinoa Sushi: mix sushi<br />

vinegar into room-temperature<br />

quinoa and rice. Place a sheet of<br />

nori seaweed on a bamboo sushi<br />

roller mat. Spread a thin layer<br />

of the quinoa and rice mix across<br />

the entire seaweed sheet. Then,<br />

in the middle (going with in the<br />

direction of the bamboo) place<br />

the inside ingredients of your sushi.<br />

This can be whatever you want -<br />

cucumber, carrots, tuna, avocado,<br />

etc. Then carefully roll it up. If you<br />

have not done this before, it might<br />

be helpful to watch videos online<br />

before you try your hand at it.<br />

Don’t fret, it’s easier than it looks,<br />

and when you’re done,<br />

you’ll have a tasty snack.<br />
