Dry beans are easy to store and versatile to use. They can be stored in

airtight containers for two to three months.

Cooking time: 40 minutes

Ingredients:

1 tablespoon oil

1 cup mushrooms, chopped

1 onion, chopped

1 teaspoon garlic, minced

1 bell pepper, seeded and chopped

½ cup vegetable stock

1 cup cherry tomatoes, halved

1 tablespoon tomato paste

1 cup kidney beans, soaked overnight

1 cup artichoke hearts, chopped
