D. 1RESUMENEl pres<strong>en</strong>te proyecto tuvo como objetivo determinar el cont<strong>en</strong>ido de materia seca de las sigui<strong>en</strong>tes catequinas,epigalocatequina-3-galato (EGCG), epigalocatequina (EGC), epicatequina (EC), catequina (C) ycatequina galato (CG), <strong>en</strong> los cultivares de té CH 14 <strong>INTA</strong>, CH 112 <strong>INTA</strong>, CH 318 <strong>INTA</strong>, CH 410 <strong>INTA</strong> y CH732 <strong>INTA</strong> elaborados como té negro, durante tres épocas de zafra. 38 ARTÍCULOS<strong>RIA</strong> / Vol. 37 N.À1ABSTRACTThe pres<strong>en</strong>t project was conducted with the objective of evaluation the cont<strong>en</strong>t of the following catechins,epigallocatechin-3-gallate (EGCG), epigalocatechin (EGC), epicatechin (EC), catechin (C) and catechingallate (CG), in the tea cultivar CH 14 <strong>INTA</strong>, CH 112 <strong>INTA</strong>, CH 318 <strong>INTA</strong>, CH 410 <strong>INTA</strong> and CH 732 <strong>INTA</strong>elaborated as black tea, during three harvest times. A system of water extraction was used and the determinationwas made by high performance liquid chromatography (HPLC), with isocratic elution.The catechin cont<strong>en</strong>ts were analyzed by analisis of variance (P < 0.05), the differ<strong>en</strong>ces were studiedamong cultivars and the population control, times and interactions. The means were compared among cultivarsand the population control by Multiple Range Test (P < 0.05). The obtained results allow to establishthe following conclusions.The total average cont<strong>en</strong>t of all the analyzed catechins, reaching at 1.53 of dry matter (%). EGCG wasthe catechins with higher conc<strong>en</strong>tration, reaching at an average of 1.10% ± 0.13, not registering significantdiffer<strong>en</strong>ces among cultivars. EGC reached a second level with a conc<strong>en</strong>tration of 0.16%±0.03. For EC, Cand CG the conc<strong>en</strong>trations were 0.16% ± 0.06; 0.06%± 0.016 and 0.04%± 0.009, respectively.Among the cultivars they pres<strong>en</strong>ted significant differ<strong>en</strong>ces, cultivar CH 410 <strong>INTA</strong> pres<strong>en</strong>t the biggest cont<strong>en</strong>tsin EGCG, EGC, EC and C, with 1.30; 0.19; 0.29 and 0.11% respectively; for CG cultivar CH 318 <strong>INTA</strong>pres<strong>en</strong>ts the biggest cont<strong>en</strong>t with 0.068%.For the harvest times, they registered significant differ<strong>en</strong>ces, with the biggest cont<strong>en</strong>ts average to thebeginning for all the analyzed catechins. Their cont<strong>en</strong>ts for CGCG, EGC, EC, C and CG, were 1.47; 0.22;0.27; 0.13 and 0.063% respectively.Key words: Black tea, polyph<strong>en</strong>ols, catechins, HPLC.INTRODUCCIÓNLa región tealera arg<strong>en</strong>tina está compr<strong>en</strong>dida <strong>en</strong>tre los54° y 56° W, 26° y 28° S, constituyéndose <strong>en</strong> la más australdel mundo, con aproximadam<strong>en</strong>te 45.000 ha <strong>en</strong> sumom<strong>en</strong>to de máxima expansión (1976-77) de las cuales41.850 ha (93%), se <strong>en</strong>contraban <strong>en</strong> la provincia deMisiones y 3.150 ha (7%) <strong>en</strong> la provincia de Corri<strong>en</strong>tes(De Bernardi y Prat Kricun, 2002; International TeaCommittee, 2005).El clima es subtropical húmedo, isohídrico, las precipitacionesvan de los 1800 a 2200 mm anuales. Con estascondiciones el cultivo desarrolla su período de zafra<strong>en</strong>tre los meses de octubre a mayo. Durante el períodootoño-invernal, por disminución de las temperaturasmedias y la heliofanía diaria, inicia un periodo de recesofisiológico que se aprovecha para la realización de laspodas anuales, periódicas y de formación.El cultivo se realiza a altitudes de 150 a 550 m, <strong>en</strong> suelosde los ord<strong>en</strong>es alfisoles y ultisoles con bu<strong>en</strong>a aptitudproductiva, que si bi<strong>en</strong> <strong>en</strong> g<strong>en</strong>eral respond<strong>en</strong> a sus necesidades,pres<strong>en</strong>tan limitaciones nutricionales posteriores,que deb<strong>en</strong> ser corregidas por medio de la fertilización <strong>en</strong>función a su estado nutricional y nivel de extracción.Las modernas plantaciones se efectúan (Hampton,1992; Obanda et al., 1992; Prat Kricun y Belingheri,2003) empleando cultivares clonales, seleccionados porsu homog<strong>en</strong>eidad, r<strong>en</strong>dimi<strong>en</strong>to, calidad de taza y adaptabilidadambi<strong>en</strong>tal. El método de propagación por semillaes cada vez m<strong>en</strong>os empleado <strong>en</strong> el país, si bi<strong>en</strong> resultamás económico, su uniformidad productiva y cualitativason bajas debida a la alta heterog<strong>en</strong>eidad g<strong>en</strong>ética.La cosecha se exti<strong>en</strong>de <strong>en</strong> promedio <strong>en</strong>tre 7 a 8meses, su inicio y fin está estrecham<strong>en</strong>te ligado a lasheladas tardías y tempranas, respectivam<strong>en</strong>te. La recolecciónes mecanizada, con intervalos de 12 a 30 días. Elnivel de recolección coincide con el despunte o "tipping",según el tipo de poda que se haya realizado, parti<strong>en</strong>dode este nivel correspondi<strong>en</strong>te a la primera recoleccióndespués del despunte, se debe elevar el nivel de recolección1 a 3 cm, cada 2 a 4 recolecciones y así sucesivam<strong>en</strong>tehasta concluir la campaña con la poda liviana.Durante la recolección, la materia prima debe conservarsesana, <strong>en</strong>tera, no compactada y aireada. Debe conservarsu color verde y aroma típico, evitando la exposicióndirecta al sol, contacto con tierra, malezas o cualquierotro contaminante. Su transporte a la planta elaboradoradebe realizarse de forma rápida e higiénica <strong>en</strong> <strong>en</strong>vases ocont<strong>en</strong>edores adecuados (EEA Cerro Azul, 1996).Las podas anuales o de producción, ti<strong>en</strong><strong>en</strong> como objetivomant<strong>en</strong>er la altura de la planta <strong>en</strong>tre 50 a 100 cm ypromover el desarrollo de tallos productivos, a partir delas yemas adv<strong>en</strong>ticias pres<strong>en</strong>tes <strong>en</strong> la ramazón.
