RUM-RAISIN COOKIES

Enhanced with the flavors of rum and nutmeg, these easy raisin cookies are fit

for both company and comfort on a chilly night.

PREHEAT OVEN TO 350°F

MAKES 4 1/2 DOZEN COOKIES

COOKIE SHEETS, GREASED OR LINED WITH PARCHMENT PAPER

1 (18.25-ounce) package yellow cake mix

1/3 cup vegetable oil

2 large eggs

3 teaspoons rum-flavored extract, divided

1/2 teaspoon ground nutmeg

1 1/4 cups raisins

1 cup (1/2 a 16-ounce tub) ready-to-spread vanilla frosting

1. Place the cake mix, oil, eggs, 2 teaspoons rum extract, and nutmeg in a

large bowl. Blend with electric mixer on low speed for 1 minute or until

blended. Mix in the raisins with a wooden spoon.

2. Drop the dough by tablespoonfuls, 2 inches apart, onto prepared cookie

sheets.

3. Bake 10 to 13 minutes or until set at edges and just barely set at center

when lightly touched. Cool 1 minute on sheets, then remove cookies with

spatula to wire racks to cool completely.

4. Microwave the frosting in a small microwaveable bowl 30 to 45 seconds

until melted enough to drizzle. Mix in the remaining 1 teaspoon rum

extract, then drizzle over cooled cookies.

VARIATION for Rum-Raisin Cookies

BRANDIED APRICOT COOKIES: Prepare as directed but substitute

chopped dried apricots for the raisins and brandy extract for the rum extract in

both the cookies and the icing.
